I dolci tipici del Natale in Lombardia

Quale dolce scegliere per accompagnare i pranzi e le cene di queste festività? In Lombardia c’è l’imbarazzo della scelta! Oggi vi portiamo alla scoperta delle ricette natalizie più amate nella nostra regione

Quali che siano le vostre preferenze per i banchetti natalizi che culmineranno nel cenone di questa sera, per concludere in bellezza non può mancare un bel dolce. Ma quali sono le ricette che verranno messe tavola nelle varie province lombarde? Il celeberrimo Panettone, amato dai milanesi e non solo, il Torrone di Cremona, la Spongarda di Crema, la Bisciola valtellinese e il Bossolà di Brescia sono solo alcune delle prelibatezze che la tradizione lega al periodo più magico dell’anno. Lungo le sponde del Lario la gustosa Miascia di Como, piatto povero preparato con pane raffermo, frutta fresca e secca, si affianca al Pan Mataloch di Bellagio, che si distingue per un inconfondibile aroma di anice dovuto ai semi di finocchio usati nel suo ricco impasto, e al Matoch di Olgiate Comasco, golosità nata all’inizio del ventunesimo secolo.

E se a Bergamo la fa da padrona la Polenta e Osei, rivisitazione dolce dell’antico piatto locale, a Lodi è una torta di mandorle dalle origini medievali a guadagnarsi il titolo di pietanza caratteristica: la Tortionata.

Molto amata a Pavia è la famosa Torta Paradiso, ma non possono mancare le Offelle di Parona, biscotti di pastafrolla nati alla fine dell’Ottocento da una ricetta casalinga del paese; mentre a Varese si gustano gli Amaretti di Saronno, le goloserie della pasticceria bustocca, il Croccante di mandorla di Germignaga e il Dolce di Induno, preparato con fichi, uvette, farina di castagne e pastafrolla.

Curiosa è invece la storia del Pan Tranvai, tipico della Brianza, un morbido pane arricchito con l’uvetta che ai primi del Novecento veniva acquistato insieme al biglietto del tram a vapore e veniva consumato durante le ore di viaggio che separavano Milano da Monza e dagli altri paesi della periferia.

Traditional Christmas cakes and sweets in Lombardy

Whatever your favourites are for the Christmas feasts, a lovely cake or sweet really rounds off a meal. But what recipes will be used in the different Lombard provinces? The famous Panettone, loved by Milanese and others, the Torrone (nougat) of Cremona, the Spongarda of Crema, the Bisciola of Valtellina and the Bossolà of Brescia are just some of the delicacies that tradition links to the most magical period of the year. Let’s discover some others.

On Lake Como, there is the tasty Miascia of Como, a simple dish prepared with dry bread, fresh and candied fruit and nuts; still on Lake Como, there is the Pan Mataloch of Bellagio, marked by an unmistakeable aroma of aniseed because of the fennel seeds used in its rich dough. There’s also the Matoch of Olgiate Comasco, a cake created at the beginning of the current century.

In Bergamo, the favourite is Polenta e Osei, a sweet reworking of the old local dish while, in Lodi, the Tortionata, an almond cake with mediaeval origins, is the traditional dish.

The famous Torta Paradiso (Paradise Cake) is much loved in Pavia but there are also the Offelle di Parona, shortbread biscuits created at the end of the 19th century from a local homemade recipe; there are the Amaretti di Saronno in Varese, the delicacies of pastry cookery in Busto Arsizio, the Croccante di mandorla of Germignaga and the Dolce di Induno, prepared with figs, currants, chestnut flour and shortbread.

Pan Tranvai, traditional to Brianza, has a curious history. This soft bread is enriched with currants which, at the beginning of the 20th century, were bought as steam tram tickets and was eaten during the journey separating Milan from Monza and the other suburban towns and villages.
